This recipe is a Russian recipe from my old friend Anna who posted a lot of recipes on my old website years ago. This reminds me of the Cheese Buttons that the German-Russian immigrants in North Dakota made when I lived there. It very well could be a variation of the same recipe. It's very good! Anna says she served these with Chicken or Smoked Farmer's Sausage.
Mix flour with mashed potatoes, salt and fat. Add egg and enough water to make a soft dough. Divide into two parts and allow dough to stand at least 10 minutes. Roll dough out on floured board until it is about pie crust thin. Cut into 4 inch squares or rounds.
Mash all filling ingredients together until fine and it sticks together.
To Put Together
Place about a Tablespoonful of filling on each square or round. Fold and seal edges together. A fork works well for crimping edges. (See picture)
Drop a few at a time into boiling water. Wait until the Varenyky floats to the top and turns white. Drain well and fry in a frying pan until golden brown, turning once to brown both sides. Serve hot as a side dish.
