Swedish Coconut Cookies

Have made these for years for my family. They are definitely a family favorite, especially during the holidays!

Instructions
  1. Preheat oven to 300° F. Cream together butter, shortening and sugar until well incorporated; Add vanilla extract. Sift together, flour baking soda and baking powder and add to butter/sugar mixture a little at a time. Fold in Coconut. Do Not Overmix! Drop by Tablespoonfuls onto parchment paper covered cookie sheets. Bake at 300° F. for 15-17 minutes or just until edges begin to brown. Allow to cool for 5 minutes before removing to cooling racks.
  2. If you want a soft chewy cookie use the shortening. If you want a little more crispy but melt in your mouth cookie, use the vegetable oil. I have made them both ways and they are both good. Just make according to your preference.
Recipe Notes

*Note: This recipe makes a huge batch, especially if you are making smaller cookies. I make very large cookies and it is still a large batch. This recipe could easily be cut in half for a family. Is a good recipe for a crowd though.
