Preheat oven to 350° F. Spray roasting pan with cooking spray. Stuff chicken with prepared dressing and Place in roasting pan. (Dressing instructions below) Mix butter and lemon juice. Pour over chicken. Sprinkle with salt and pepper. Place in preheated oven and bake 20 minutes per pound. After first 15 minutes, pour chicken stock over chicken; baste frequently with pan juices during remainder of cooking time. Remove chicken to heated platter and keep warm until serving.
Place bread cubes in a large bowl. Heat butter in skillet and saute vegetables and herbs. Sprinkle with salt and pepper. Saute for 5 minutes. Mix bouillon granules and eggs into chicken stock and add to bread cubes and toss. Blend well. Loosely stuff neck and body cavities with portions of the dressing. Put any remaining in a greased baking dish. Cover and bake along with chicken.
