Olive Garden Hot Artichoke Spinach Dip (Copycat)

My daughter Sara and I, looked and looked for a good recipe that tasted like the Olive Garden recipe and tried different recipes and modifying them and this is what we came up with. Sara likes it without the topping, as she likes things pretty basic and not fussy and I like it with the topping. I think it looks yummier and when they look yummier, they taste better to me! Each to their own!

Instructions
  1. Boil artichoke hearts in 1 Cup water for 10 minutes or until tender.
  2. During the last 3 minutes of boiling the artichoke hearts, add spinach to blanch; Drain in colander. Mash.
  3. Heat cream cheese in microwave until creamy; Add spinach and artichokes and stir until well combined.
  4. Add remaining ingredients and combine until well incorporated; Transfer to small oven ready serving dish.
  5. In separate container, stir breadcrumbs, butter and 1 Tablespoons Parmesan cheese until crumbly; Sprinkle over top of dip mixture and brown slightly with a kitchen torch or place under broiler to bring topping to golden brown.
  6. Remove from oven and serve warm with crackers, chips or toasted bread.
