This could be very low fat if you just swap out some ingredients. I will do two recipes. The original one here and another low fat one (my version) afterwards. Good for diabetics and those with heart disease. (A much healthier version)

Instructions
  1. Chop and shred imitation crab into small bits.
  2. Mix all ingredients well and cover.
  3. Chill 6-8 hours or overnight.
  4. Serve with crackers and/or snack bread.
