Cajun Style Chicken Nuggets

Chicken nuggets have always been a hit with my kids when they were young at home and they are a hit with my grand kids now! What kid doesn’t love chicken nuggets?

It's been awhile since I have made these, but I have a little different way of cooking these. In fact, I use a mixture of milk and eggs that I dip them in first, and then into some flour, re-dip them in the eggs and milk and then into the bread crumbs. (I mix the seasonings in with the flour and the soup mix in with the bread crumbs) and then drop them into the fryer. It makes for much better chicken nuggets. I had a heck of a time getting the red pepper to stick to the nuggets and got a better overall kick to the recipe, using cayenne pepper in place of the red pepper. I will add an optional ingredient list and two additional methods of cooking to the recipe. You may want to try your own tweaks to this recipe. Instructions
  1. 1st method: In large bowl, combine onion soup mix, bread crumbs, chili powder, cumin, thyme and red pepper. Dip chicken in bread crumb mixture, coating well. In large skillet, heat 1/ 2 inch oil and cook chicken over medium heat, turning once until done, about 3-4 minutes on each side.; drain on paper towels. Serve warm and if desired with assorted sauces and mustard.
  2. 2nd method: (Microwave Directions) Prepare chicken as above. In 13"x9" baking dish, arrange chicken; then drizzle with 2 - 3 Tablespoons vegetable oil. Heat uncovered at high (Full power) 6 minutes or until chicken is done, rearranging once; drain on paper towels. Serve as above.
  3. 3rd method: (Deep Fryer Directions) Heat oil to 350° to 375° F. while preparing chicken. Alternate preparation (My Method): Beat egg and milk together in one bowl. Mix flour and spices in another (using cayenne pepper in place of red pepper). In another bowl, mix bread crumbs with onion soup mix. Dip chicken pieces in egg mixture, then in flour mixture. Dip chicken again in egg mixture and then in bread crumbs mixture to coat evenly. Drop pieces into heated oil in deep fryer cooking about 3 minutes on each side or until golden brown on both sides and chicken is done in the middle. Serve as above.
